Not sure how you change it for everything but I know for each media file type you can find the file you want, right click/properties, then there's an option for what program to use to open that program. Pick VLC, then hit apply. It should change it for all of those media types on your computer. It shouldn't take too long or be all that tedious because you can see which ones will be opened by VLC because of that little cone on the icon.
